* Organic or Biodynamic Wine

Organic is a term used to describe wines that are free of pesticides, herbicides, chemical fertilizers and other synthetics; at this same time, necessary natural preservatives like sulfites are kept to a minimum. In the cellar, modern and traditional techniques are combined, producing the best possible wines with the fewest detrimental effects on the environment. Grapes are often picked by hand and the wine is made with minimal interference, handling or filtration.

Biodynamic refers to an agricultural philosophy developed by Rudolf Steiner that goes above and beyond organics. In addition to the organic methods described above, this philosophy is grounded in treating the Earth as a living being by recognizing the basic life forces found in nature and the ways in which they affect the soil and vines. Natural compost and nutrient preparations, as well as planting and harvest schedule in harmony with the cosmic cycles, bring about balance between the vines and the Earth. The result is a self-sustaining vineyard whose wine best expresses the terroir, or place in which it is grown.
